By popular request, here's my pumpkin muffin recipe....tried and true and the pic is the first batch I made earlier this week. M-m-m-m!!
Pumpkin Muffins
3 cups all-purpose flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
3 cups sugar
4 eggs
2 cups pure pumpkin puree (not pie filling)
2/3 cup milk
2/3 cup oil (I use canola or vegetable)
¼ cup brown sugar
Optional – 1 cup golden raisins and/or 1 cup finely chopped walnuts
Preheat oven to 375° F.
Combine dry ingredients in a large bowl. Combine wet ingredients in another bowl. Then mix the two sets of ingredients together.
Fill paper-lined muffin tins 3/4 full. Sprinkle brown sugar on top of each muffin. Bake for 20 minutes or until done tested with a toothpick inserted in the centre of the muffin.
